These Banana Oatmeal Cookies are hands down the very best banana flavored cookie I've ever had. Not only are they are moist and chewy for times, but they are unmistakably banana-y.

Banana may be one of these flavors that could get lost once you bake with it. It can be really delicate taste. It always bums me out when that occurs, cause I really like the taste of banana. And so does the hubs.

When great brewed banana treats come along, we move a little crazy for them.

To bake them, spoon about a tablespoon of bread and produce a thick disc, instead of a ball. They spread somewhat after baking, and therefore don't place them too close together. Bake them for approximately 10-12 minutes to get a nice, moist cookie. So yummy!

1 additional thing I really like about this recipe is really where it came from.

My grandma (my father's mother ) passed out in 2008. After I started baking a lot a couple of years ago, my uncle gave me her cookbook that he'd had didn't use. I have had it on my list to produce several her desserts ever since.

My father and I made her gaufrettes (a French cookie -- my great grandparents were French) a year or so past. It was a tradition for my grandma to make them every Christmas! She gave everyone a big tin of them, which was really an effort with 6 sons.

I now know precisely how much of a feat it was! My goodness. She left them with a traditional gaufrette iron which goes over a open fire. My father and I had them in the stove. They cook very quickly and you have to be precise. Too long and they kind of disintegrated to the iron. Overly long and they burned into the iron and we still needed to scrub it out.

My father was minding the batter and taking away the cookies, I had been operating the iron, the hubs was time things. It required a number of attempts to get it , but they had been so good! I've click over here now attempted to make them again on my own and it never works. I'd love to share the recipe, but the dang irons are so tough to find. And pricey. Sooner or later, I would like to just earn a cookie with the exact same gaufrette flavor.

For now though, I'm sharing these biscuits. I don't believe I had them when she made thembut they're from her novel.

It is such an enjoyable recipe book to look through, also. There are many handwritten pages, including clippings and paper recipes which were taped to the book. I like the way that they used to compose recipes from the newspaper -- they had the person who submitted it's title and cute little tales. It is so fun to browse through them! What another time on earth!

Anyways, I do not know where this recipe originated from. The paper looks like it had been on a flier out of their square dance band or something (they were big to square dancing). It is definitely from West Virginia, in which they lived.



In any event, I am so happy to finally share a recipe from her book with you! I made a few adjustments to make them thicker and more puffier and they are delicious. There will be more to come from her recipe book, but for now enjoy the banana.

MOIST AND CHEWY BANANA OATMEAL COOKIES

Return: 34-36 COOKIES


INGREDIENTS:



1 cup brown sugar, packed

1/2 cup sugar

1 egg

1 tsp vanilla extract



1 1/2 cups all purpose flour

1 1/2 tsp cinnamon

1 tsp baking soda

1/4 teaspoon ground cloves

2 tsp cornstarch

3 cups old fashioned oats

DIRECTIONS:

1. Mix together egg, brown sugar, egg, sugar, vanilla extract and mashed bananas until well blended.

2. Add flour, cinnamon, baking soda, cloves and cornstarch and blend until blended.

3. Stir in oats.

5. Spoon tablespoons of dough onto a cookie sheet covered with parchment paper. Flatten dough a little bitinto thick disks. They will disperse a little when baked.

6. Bake for 10-12 minutes or until edges just start to golden.
